A fraction of a percent of a superluminal speed is still nothing to sneeze at.
True, but I cannot think of any  builds that even approach that fraction, most other speed builds are only about as fast as  a racecar or around that area.

Strictly speaking, his body parts fly off and slap his opponents in the face, only to return to him. Or, if they're not returning, they just flop there and he no longer has an Unarmed Strike until he moves to that spot to pick them up. Interestingly, since any part of the Monk's body can be used to make an attack, this means he no longer has any parts of his body, but he still has all his other statistics (other than his unarmed strike). Again, just strictly speaking from the rules.
So you end up stuck in an endless loop, unable to act, forever.

In retrospect, much like Keanu Reeves.

I am constantly amazed by how many DM's ban Tomb of Battle.  The book doesn't even exist!

The entire body of the monk is a weapon. So enhance the entire body. If the part you enhance breaks off, then in this case the entire body and all of its parts should break off of...well, whatever it's attached to at the time.

You are correct on it being cartilage, but I have to disagree with you on the idea that a skeletons would contain anything but the jaws.  I have dissected a shark before, so I know the anatomy.  The jaws are different in that, while cartilage, the entire thing is heavily covered in calsium salt crystals similar to bone in makeup (up to five layers think in Great Whites).  As such, when the skeleton is animated, this is the only part that would remain as it is not soft tissue (teeth are attached to the jaw).  A Shark Skeleton would indeed be a swimming pair of jaws and nothing else.

Ah, ok. I've only dissected dogfish, and the only thing we actually did with their jaws was cut through the articulation with the rest of the skull so we could look at their circulatory system properly. I didn't actually know the jaws had significant calcification. Spiffy. Guess we're using different definitions of skeleton (mine just being the skeletal system, yours being what would be likelier to be animated as a skeleton unless the magic for some reason preserved the cartilaginous bits, which judging from other skeletons it doesn't). My bad.
