What are they called?

We know the fighter-mage is called a gish, but what about a fighter-rogue? A mage-rogue?
My work
The tier system in a nutshell:
[spoiler]Tier 6: A cartographer.
Tier 5: An expert cartographer or a decent marksman.
Tier 4: An expert marksman.
Tier 3: An expert marksman, cartographer and chef who can tie strong knots and is trained in hostage negotiation or a marksman so good he can shoot down every bullet fired by a minigun while armed with a rusted single-shot pistol that veers to the left.
Tier 2: Someone with teleportation, mind control, time manipulation, intangibility, the ability to turn into an exact duplicate of anything, or the ability to see into the future with perfect accuracy.

A fighter-rogue is called a Ranger or Scout.   ;)

A Mage-rogue would be called suboptimal, I suspect.

Arcane Trickster for mage/rogue.

Yes, but see Unseen Seer, getting twice as much sneak attack as a normal rogue via spells and class features while having 19th or 20th level wizard casting is tech.

I'm aware, but I chose my first two answers based on how well they sounded not on how (sub)optimal the classes associated with them are. :)

It was originally used to describe the Githyanki fighter mages. I can't find the specific reference/publication, but I'm sure someone here can remember the specifics.

Gish dates Back to the first edition Fiend Folio.  It means "Skilled" and refers to an arcane spellcaster who fights.  iirc it actually says that a Mage/Thief is a Gish.
