But what if you jumped out of the cube(provoking an AoO, but after that, out of reach) and landed back within reach? Would that provoke a second AoO? Technically, it's still the same opponent doing the same action(movement), but he should be provoking one for leaving, and then another for re-entry, right? :D
No.  You only get one AoO per person a round for movement-based AoOs.

Note that the Jump rules have a table for standardized vertical reach (height of creature + arm/limb length to measure how high they can touch/affect), so it's probably best to just go by that.  For Medium creatures, the max vertical reach is 8 ft, though I'd just round to 10 ft and say a medium creature threatens the squares cubes directly and diagonally above him and leave it at that for simplicity.
