Warforged is the most painless entry into Soul Eater, followed by Dragonwrought Kobold and then any non-humanoid Totemist/Psychic Warrior.

As an aside, no matter what method you use to accomplish your goal, there are some feats in Libris Mortis that improve energy drain taht I think you would enjoy.
I am constantly amazed by how many DM's ban Tomb of Battle.  The book doesn't even exist!

Gravetouched Ghoul (Libris Mortis) has really good stats for a Monk or Swordsage. Makes for excellent AC tanks at low to mid levels.
It always seems like the barrels around here have something in them.

Gravetouched Ghoul doesn't add Energy Drain. However, I REALLY like soul eater. However, I wish I could get it as undead. So draining life from others is something that we only can have if we are alive? Any possible interpretation to get around this?

There are ways of living folk counting as undead, but not of undead counting as living folk.  Soul Eater is unavailable to you if you're locked into Undead, but wights or (dare I say it) vampires are open to you.  I would go with wight as they're badass.  Use the monster class in Libris Mortis.

They don't/haven't, was the point. 3.5 is as dead as people not liking nice tits.

Sometimes, their tits (3.5) get enhancements (houserules), but that doesn't mean people don't like nice tits.

Though sometimes, the surgeon (DM) botches them pretty bad...

Yes, but one level in the wight class doesn't equal 1 HD. And I would honsetly rather have a template than do the monster class. But that's just me.

You have the three options I presented in my first post.

1. Suck up some LA and play an undead with Energy Drain
2. Forget being undead and go into Soul Eater
3. Go to level 10 in Shadow Sun Ninja

It's your pick on which you go with, but they're all pretty much mutually exclusive.  Those are the three ways to accomplish what you desire.

What about my idea to be a Corpse Warforged with a necklace of natural attacks +1/souldrinking as a warforged component?

Being an undead robot that siphons others' life away is just cool.

Pretty much, yeah.  Of course, at that point you're not a Monk, but oh well.  Not like it's that big of a loss.
