MoI is extremely fun. All the flexibility of a full caster, without all the infinite titan loops and Balck Tentacles Stinking Cloud stunlocks that the DM spends all his time balancing out. The XPH is widely regarded as the most balanced book in the whole of 3.5, although the Soulknife is a tad weak. And I can't recommend the Tome of Battle highly enough. Swordsages, Warblades and Crusaders are made of win. And they make sure that the Incarnate doesn't obsolete your melee characters. ;)

Just make the Soulknife a full BAB class and it is fixed.

ToB is probably the best 3.5 book out there.  My swordsage leveled yesterday and I was reminded of how cool it was as I chose her new maneuvers.  Fun classes, cool flavor...just a job well done.

I really liked Dragon Magic - the dragonfire adept is fun, the dragontouched races are cool, and the prestige classes are nifty.  It mixes well with Races of the Dragon.

OH!  And Dungeonscape is actually my favorite 3.5 book!  Solid info for DMs, a pair of nifty PrCs, and some cool feats and alternate class features.  Great stuff. 

Also, as a GM I liked the first half of the DMG II - good, solid advice on DMing.

Elder Evil and Exemplars of Evil (new books) are pretty nice as well, they can really bring more for your high level (18-20) game  :)

Ok, here it goes :P

-Tome of Battle (finally some versatility for beatsticks, and awesome fluff as well)
-Tome of Magic (Binder, 'nuff said ;))
-Magic of Incarnum (great options and versatility, new but still quite easy to learn/use)
-Expanded Psionic Handbook (plenty of options, easy to learn/use, and great fluff options)
-Eberron Campaign Setting (the most original and awesome campaign setting as far as I'm concerned)
-Dragon Magic (just love the Dragonfire Adept)

I bought that book the day before I bought the Tome of Battle (The second it was out).

My two favorite books.
