For a two level dip out of core, if BAB stacking is allowed.  And their variants are handy on Psionic characters if you can stack variants...it made Vegetardent possible :P

EDIT : By the way, who's the 5th Black Mage?  I know me, Solo, Cantrip, and Hijax...

Yes I use them.  Dips can be fun (never more than a couple of levels).  Also, limiting yourself to a monkish character (i.e. using only monk, monk PrCs, and occasional dips) can be an interesting way to stay at the same power-level as a fairly unoptimized party.

My Druid wears a Monk's Belt of Battle, and there's a Monk/Swordsage in the party that I helped build.. Greater Mighty Wallop is pretty incredible.

I've been trying to talk people into using the rebalanced compendium.  That said, I've always been tempted to play a monk/urpriest/sacred fist...  Sure, there are better ways to go but none of them involve a kung fu master who gains his power by worshiping a dead god. 
DM: The iron door is enchanted with a powerful anti-magic barrier.
Zavy: The door itself?
DM: Yes.
Zavy: I get acid flasks and a pry bar.  I just found myself a new tower shield.

In my build compendium on here I have a build based on just that.  Also uses Black Flame Zealot and is entirely Wis SAD other than death attack DC (which is a moot point against anyone you're gonna use it on).  Somewhere I also have an RKV-Ur Priest that's built as an unarmed killer (IL 17 or 18, CL of the same or so, and 2 9th level maneuvers).  Basically buff to the 9's, sneak in under magically enhanced stealth, go Snake on their ass with Feral Death Blow :D

Wisdom to AC, the ability to always threaten, all good saves and a bonus feat isn't a bad dip. At all.

Ironically in one of my other Ur-Gish, that good Fort save got me into Ur-Priest on time, with the bonus of giving Evasion and Wis to AC :P

I would actually argue that Monk 1 or 2 is one of the better dips. I think people forget the range of feats that all the fighting styles can grant you.

I have used a monk. I ever optimized the fluff. But that means I purposely made it worse.

Drunken master 4. You can use long improvised weapons, and your threatened radius becomes as big as them. War hulk means you can carry a massive(aka long) weapon because of the strength boosts, and you can attack everyone within your threatened radius.

Tashalatora for me as well. Kalastar Monk/Psywar with Ectoplasmic Fist, Mighty Arms warforged graft (w/Battlefist), Improved Natural Attack(or Fanged Ring), Expansion(+2 sizes), Shape Soulmeld(Totem Avatar) with the Open Chakra power to bind it to Shoulders...

2d10->4d8->6d8->8d8->16d8->24d8

Add on Vampiric Blade and you heal 1/2 of 24d8 with each attack, or an avg. of 54 hit points per attack.

Monks aren't (that) bad when you have Eberron.
It always seems like the barrels around here have something in them.

Sadly you can only optimize a 1-2lvl dip.

Eberron: Monk2/Pal4/ArgentFist3/Pal11 is quite excellent if you can use Serenity. Don't take more argent fist; its a trap!

FR: Monk3/Pal 17 Broken One gets your lay on hands back to full cap. Again with the Serenity.
