Let's see if we can compile a list of movies that are either so good or so profound you just have to see them.

13th Warrior (and read the book, well, a lot of his works are like that) is one fantastic movie.
Fight Club too.

The top four Ghibli movies: Princess Mononoke, Spirited Away, Grave of the Fireflies, and Whisper of the Heart are all good, and one of them is the only pure romance movie I've ever liked (every other romance has sucked, or was a combo romance/comedy, romance/drama, etc.)

The Good, the Bad, and the Ugly.

Hmm, last time I saw it I was still in college, so at least two and a half years....

American History X.  Very disturbing at times, but oh so good.
Se7en's on the cusp.  It's a great movie and I like it, but I don't feel like it's a "must see".  There's a ton of movies that need watching before it, that's for sure.

I disagree.  While a great movie in its own right, not his best.  His best would be Mononoke.  And not Spirited Away like everyone claims...that one's his third best.  Whisper of the Heart is number two.  For the record, since Nausicaa was the movie that practically gave birth to Studio Ghibli, I consider it a Ghibli movie.  The time line is close enough, and the style is certainly the same.

I don't know what you do and don't know, so I don't want to give anything away.  What I find interesting isn't just how well done it is, but how well done it is on a fairly small budget.

My cousin and I watched it, and we were debating of if we could run a solo D&D game like that, but we didn't see how it would work.

The Last Legion is pretty good as well. It is one of the few King Arthur stories that isn't about the romance. It is more along the lines of a prequel to Clive Owen's King Arthur (more gritty, less hollywood love and hocus pocus)
