For skills.. well, might be tricky. The DC will be off. You'll have a much higher chance to roll average score. Essentially, you'll be taking 10 all the time. Well, you'll be taking 14 I guess. Hmm, you could use a 4d6-3 for skills.

Personally, I'd say it's worth a try (tell us how it goes!). The 3d6 method does have the advantage of keeping the same "average" roll (10.5) as the d20, so it may be the method that least screws with the expected results and demands the least adjusting of DCs in order to keep relative difficulty.
